Kick your packaged breakfast-on-the-go up a culinary level and bake a handmade batch of granola “bar” bites. Choose your favorite granola cereal without raisins that has seven or fewer grams of added sugars to keep this recipe healthful.



1. Preheat the oven to 300°F.
2. Spritz the 12 cups of a mini-stick-resistant muffin tray with cooking spray.
3. Add the dates and coconut oil to a food processor; cover and blend on high speed until pureed. (Note: The fresher/moister the dried dates, the better.)
4. Add the granola and pulse about 6 or 7 times, until crumbly and evenly combined, not pureed.
5. Evenly transfer granola mixture into the cups of the mini-muffin tray. Extra-firmly press to compact using a flexible silicone spatula. Bake until firm, about 15 minutes.
6. Let tray cool on a cooling rack for 10 minutes. Then remove granola bites, using a toothpick to loosen edges from the tray. Place bites directly on cooling rack to finish cooling and slightly crisping. Enjoy on the go.
