Directions

1. On a cutting board, spritz one side of each bread slice with cooking spray. Flip over the slices.
2. Spread goat cheese onto each bread slice. Spread one slice with raspberry fruit spread and top with dandelion greens (or other greens). Place the other bread slice on top, goat cheese side down.
3. Heat a stick-resistant skillet over medium heat. Add sandwich, pressing firming with a spatula to compact ingredients.
4. Cook until bread is well toasted and greens are gently wilted, about 3 to 4 minutes per side. Slice in half on diagonal. Serve immediately.
