1. Prepare an outdoor grill or grill pan. Remove stems and scrape out dark gills from the mushroom caps. Place mushrooms on a cutting board or sheet pan and dab both sides of the caps with the oil using your fingertips or a silicone pastry brush. Sprinkle the gill side with the garlic, thyme, pepper, and 1/4 teaspoon of the salt.

2. Mash the avocado, lemon juice, and remaining 1/4 teaspoon salt with a fork in a small bowl. Set aside.

3. Grill the mushroom caps, gill side up, over direct medium-high heat until lightly charred, about 4 to 5 minutes. Gently flip over and grill until mushrooms are tender, about 4 minutes. Transfer to the cutting board or sheet pan, top the gill side with the cheese, and let stand about 5 minutes to allow mushroom juices to settle and cheese to melt.

4. Spread the avocado mixture on the bottom portion of the buns. Top with the onion, cheesy mushrooms, and arugula. Add the bun tops and serve. (Note: Use whole grain sprouted or seeded buns, if possible.)
