You’ll insert a skewer into grilled portobello mushrooms and red bell peppers along with whole-grain slider rolls spread with guacamole. Mushrooms naturally contain vitamin D, which can help promote bone health.



1. Prepare a grill.
2. Slice rolls in half, burger-style. (Note: Ideally, use 1 1/2-ounce rolls, about 3-inch diameter.) Set aside.
3. Remove stems from mushrooms.
4. Cut bell pepper into 5 pieces.
5. Spritz mushrooms and red bell pepper pieces with cooking spray.
6. Grill over direct medium-high heat until well done, about 10 minutes total, flipping only as needed. Set grilled mushrooms and bell pepper pieces aside on a rack over a rimmed baking sheet to allow draining of any excess liquids.
7. Spread guacamole on the cut surface of each bread roll.
8. Insert onto a 10- to 12-inch bamboo skewers the following, roll slice (guacamole side up), mushroom, and bell pepper piece. Continue inserting until all ingredients used, ending with a roll slice (guacamole side down), and serve.
