Grilled Pound Cake With Saucy Strawberries

This must-try dessert features grilled pound cake adorned with a warm strawberry topping. Strawberries provide fiber, an anti-inflammatory called quercetin and plenty of fruity sweetness. To make the topping, in a heated pot stir together strawberries with a little raw coconut nectar and a splash of balsamic vinegar.

INGREDIENTS

SERVES 2

  • 1 1/2 cups frozen strawberries
  • 2 piece Cake, pound, commercially prepared, other than all butter, enriched
  • 2 tsp Raw Coconut Nectar Low Glycemic Sweetener
  • 1 tsp Balsamic Vinegar
  • 2 sec Natural Non-Stick Cooking Spray, Coconut Oil

DIRECTIONS

1 Thaw strawberries and pound cake, if frozen.
2 In a small saucepan, stir together strawberries, coconut nectar (or honey), and balsamic vinegar. Heat over high until sauce is bubbling and strawberries are fully heated through, about 2 minutes.
3 Meanwhile, spritz a grill-pan with cooking spray and fully heat over high.
4 Grill pound cake slices until rich grill marks form and cake is heated through, about 2 minutes total.
5 Serve grilled pound cake topped with strawberry sauce.
