Grilled Vegan Pesto “Burgers”

INGREDIENTS

SERVES 4

  • 1 oz Basil, Fresh
  • 2 garlic clove
  • 20 pieces Almonds, Smoked
  • 1/4 cup Green Tea
  • 1 1/2 tbsp extra-virgin olive oil
  • 1 red bell pepper
  • 4 Portabella Caps Giant
  • 1 dash sea salt
  • 4 serving Ezekiel 4:9 Organic Sprouted 100% Whole Grain Flourless Sesame Burger Buns
  • 4 Red Onion Sliced
  • 1 1/3 cups Organic Alfalfa Sprouts

DIRECTIONS

1 Add the basil, garlic, almonds, tea, and oil to a blender or food processor; puree.
2 Prepare an outdoor grill or grill pan. Cut the bell pepper into 4 large pieces. Grill the mushroom caps and bell pepper over direct medium-high heat until rich grill marks form, about 4 to 5 minutes per side, brushing the mushrooms with the basil pesto sauce during grilling. Add 1/8 teaspoon salt to the mushrooms. Let stand for about 5 minutes to allow mushroom juices to settle.
3 Spread the mashed avocado on the cut side of each bun. Sprinkle with 1/4 teaspoon salt.
4 Onto the bun bottoms, add the grilled mushroom and bell pepper. Then top with the onion, sprouts (or shredded lettuce), and bun tops.
