Grilled Vegetable Greek Yogurt

INGREDIENTS

SERVES 1

  • 1 cup plain low-fat Greek yogurt
  • 2 tsp extra-virgin olive oil
  • 1/4 tsp sea salt
  • 1/4 tsp Black Pepper
  • 3/4 cup Grilled Squash, Peppers And Asparagus
  • 1 slice Lemon wedge (small)

DIRECTIONS

1 In a medium bowl, whisk together the yogurt, olive oil and salt. Transfer to a jar or serving bowl.
2 Top with grilled vegetables of choice. (Hint: Use leftovers! Try grilled bell peppers, red onion, cherry tomatoes and/or zucchini).
3 Serve with lemon wedge.
4 Use pre-grilled vegetables (leftovers) for this recipe.
