Gruyere Whipped Celery Root

To make this potassium-packed root seem familiar, here it’s prepared somewhat like mashed potatoes, but pureed for a nice texture. Recipe and image courtesy of Jackie Newgent, RDN.

INGREDIENTS

SERVES 6

  • 8 cups Celery Root (celeriac)
  • 4 cups garlic clove
  • 1/2 cup 2% Milk
  • 1 1/2 tbsp Butter, Unsalted
  • 1 tsp Dijon Mustard
  • 1 1/2 tsp sea salt
  • 1/2 cup Shredded Natural Swiss And Gruyere Cheese
  • 1/3 cup Chives

DIRECTIONS

1 Fill a large saucepan about 2/3-full with cold water. Add the celery root cubes and garlic and bring to a boil over high. Boil until fork tender, about 20 minutes.
2 Drain the celery root cubes and garlic well. Add to a food processor with the milk, butter, mustard, salt, and pepper. Puree until smooth. Adjust seasoning.
3 Transfer the whipped celery root to a serving bowl. Immediately stir in the cheese and chives.
4 (Note: You’ll get 8 cups peeled celery root cubes from about 2 large whole celery roots. If you prefer, replace part or all of the celery root with potatoes.)
