Yovana Mendoza, better known as Rawvana, shared a way to use these nutritious tubers as an amazingly filling base for healthy toppings in this guacamole-loaded sweet potato.

  • 1 sweetpotato , raw sweet potato
  • 1/2 cup romaine lettuce, shredded
  • 1 fruit without Avocados, raw, California
  • 2 medium whole tomato, diced
  • 1/4 medium red onion, diced
  • 1 tbsp fresh cilantro
  • 1/2 yields lime juice
  • 3 tbsp Tahini
  • 2 tbsp Lemon Juice

1. Wash your sweet potatoes and pierce holes in them with a fork.
2. Preheat the oven to 400F and roast your sweet potatoes for 25 to 45 minutes (depending on thickness).
3. In a medium-sized bowl, mash together avocado, tomatoes, onion, cilantro, lime juice and sale to taste.
4. In a small bowl or mason jar, whisk together tahini and lemon juice.
5. Once sweet potatoes have cooled, place on a bed of lettuce.
