You’ll start with thawed whole-grain or multigrain pizza dough and dress it with baby spinach and part-skim mozzarella. After baking, top the pie with fresh parsley and fried eggs for extra protein. But the thing that makes this pie befitting of Valentine’s Day? Right before you bake it, you’ll shape it into a heart.



1. Place a stick-resistant large baking sheet, pizza pan or pizza stone in 500°F oven to preheat.
2. In a large bowl, toss together spinach, mozzarella (or provolone) cheese, garlic, 1/8 teaspoon of the salt, hot pepper flakes, and 1 tablespoon of the olive oil until well combined; set aside.
3. Lightly flour a clean kitchen surface. Divide dough in half; roll by hand into oval balls; then press together to form a heart shape. Then shape dough with a rolling pin into a heart-shaped crust, about 12- by 14-inches.
4. Carefully transfer the prepared dough to the preheated baking sheet. (Hint: Gently roll up dough over a rolling pin, then unfold onto the baking sheet.) Quickly but carefully brush dough with 1 1/2 teaspoons of the olive oil, then top entire surface with spinach mixture.
5. Bake until the crust is crisp and brown, about 12 to 14 minutes.
6. Meanwhile, heat the remaining 1 1/2 teaspoons olive oil in a large stick-resistant skillet over medium. Add the eggs and fry until desired doneness, about 4 to 5 minutes. (Hint: Fry two more eggs if desire one whole egg per serving of pizza.)
7. Sprinkle pizza with the parsley, top with the fried eggs, and sprinkle with remaining 1/8 teaspoon salt. Squirt with desired amount of the lemon, and serve.
