Hearty Gazpacho Bowl

We’ve taken gazpacho to the next level by adding chickpeas, corn and avocado; it’s a dish that’s fit for an entree. The combination of complex carbs, protein, fiber and healthy fats gives this appetizer true staying power. Feel free to turn up the heat by adding more pepper.

INGREDIENTS

SERVES 4

  • 1 yields lime juice
  • 1 whole Long English Cucumber
  • 1/2 medium red onion
  • 1 garlic clove
  • 2 cups Low Sodium Tomato Juice
  • 1 1/2 Tomato, Large
  • 1/4 Peppers, serrano, raw
  • 2 tsp Sea Salt
  • 1 1/4 cups cooked chickpeas, without salt
  • 1 1/4 cups Frozen Corn
  • 4 tbsp Cilantro
  • 1 fruit without Avocados, raw, California

DIRECTIONS

1 In a blender combine lime juice, cucumber, onion, garlic, tomato juice, tomato, pepper and salt. Blend on high until well-mixed and a thick consistency is achieved.
2 Transfer to a bowl and fold in chickpeas and defrosted corn until well-mixed.
3 Serve soup in bowls and top with cilantro and avocado.
