We’ve taken gazpacho to the next level by adding chickpeas, corn and avocado; it’s a dish that’s fit for an entree. The combination of complex carbs, protein, fiber and healthy fats gives this appetizer true staying power. Feel free to turn up the heat by adding more pepper.

1. In a blender combine lime juice, cucumber, onion, garlic, tomato juice, tomato, pepper and salt. Blend on high until well-mixed and a thick consistency is achieved.
2. Transfer to a bowl and fold in chickpeas and defrosted corn until well-mixed.
3. Serve soup in bowls and top with cilantro and avocado.
