In terms of nutrition, it’s like brownie batter gone wild! Rather than using excessive amounts of highly processed carbs, this recipe consists of black beans, peanut butter, oats, unsweetened cocoa powder, pure vanilla extract, unrefined coconut oil, sea salt, hemp seeds and just enough coconut nectar (or honey) for natural sweetness. A brownie-inspired ingredient list doesn’t get much “cleaner” than this.

1. Add well-drained beans, peanut butter, oats, cocoa powder, coconut nectar (or honey), liquefied coconut oil, vanilla extract, and salt to a food processor. Cover and puree until creamy, about 1 1/2 minutes.
2. Add the hemp seeds and pulse to evenly combine.
3. Transfer the mixture to a bowl. Place in a bowl and refrigerate for 15 minutes.
4. With clean hands, form into 12 balls, about 2 tablespoons each.
5. If adding toppings, spread toppings on a plate or flat surface and the roll the balls back and forth a few times until evenly covered.
6. Place in a sealed container. Ball are best stored in the refrigerator and can be kept for up to 1 week or frozen for 1 month.

Notes:
You can coat these protein balls in your favorite toppings. Try matcha, crushed dried raspberry powder, shredded coconut or cooking lavender powder.
