Here’s a warm Mexican-style bowl of indulgence -- natural, nutrient-rich, colorful indulgence. It includes superfood nutrients, such as lutein and zeaxanthin, which you’ll get in four of this bowl’s main ingredients: spinach, eggs, avocado and corn. These nutrients are considered essential for good eye health.



1. In a large deep skillet, heat 1 tablespoon avocado oil (or grapeseed oil) over medium-high. Add corn and sauté until lightly browned, about 5 minutes.
2. Add grape tomatoes, scallions, cilantro, and 1/4 teaspoon salt and sauté until tomatoes are heated through, about 2 minutes more.
3. Top with the spinach and remaining 1/4 teaspoon salt; cover. Remove from heat and let stand covered for about 5 minutes to allow spinach to wilt.
4. While spinach is wilting, heat remaining 1/2 tablespoon oil in a large stick-resistant skillet over medium-high. Fry eggs until desired doneness.
3. Arrange among two bowls the spinach, corn-tomato mixture, and avocado. Top with eggs. Adjust seasoning.
4. Drizzle with salsa, and serve.
