Italian-Style French Toast

Italian-Style French Toast

INGREDIENTS

SERVES 1

  • 1 cup Grape Tomatoes
  • 1 tsp extra-virgin olive oil
  • 1/2 tsp balsamic vinegar
  • 1 Free Range Egg
  • 1/4 cup Fat free milk
  • 1/8 tsp sea salt
  • 1 oz Whole Grain Baguette Bread
  • 12 leaf fresh basil leaves

DIRECTIONS

1 * 1 ounce of toast is about 3 slices.
2 Toss together the tomatoes, olive oil, and vinegar in a small bowl. Cover and chill in the refrigerator overnight.
3 Whisk together the egg, milk, and salt in a liquid measuring cup or small bowl. Place the sliced baguette into a small baking pan or rectangular food container. Evenly pour the egg mixture on top of the sliced baguette, flipping each slice a few times to fully coat. Cover and chill in the refrigerator overnight.
4 In the morning, spritz a large (PFOA-free) nonstick skillet with organic cooking spray and place over medium. Add the egg-soaked bread slices and cook until browned on both sides, about 4 minutes per side.
5 Transfer to a plate, top with marinated grape tomatoes, and sprinkle with the basil leaves.
