Jessica's GF muffins

Great way to jump start the day! These muffins are nutritious and delicious!
Ingredients
- 1 cup Carrots Shredded
- 1 cup Fresh Zucchini
- 2 cups Dates
- 2 cups Unsweetened Apple Sauce
- 1 1/4 cups Butternut Squash, Pureed/mashed
- 1 tsp Spirulina Powder
- 2 tbsp Chia Seeds
- 2 tbsp Hemp Protein
- 4 Omega-3 Eggs
- 1/4 cup Raisins
- 1/4 cup Sunflour Seeds (raw, Hulled, Unsalted)
- 3/4 cup Coconut Flour
- 2 1/4 cups Gluten Free Flour Mixture
- 3 medium Bananas
Directions
Shred in a food processor four carrots, four kale leaves without stems, and one zucchini. Soak dates in boiling water for ten minutes then drain water. Puree dates, butternut, apple sauce, and three bananas all together. In a mixer whip the eggs then add in the shredded ingredients and the pureed fruits, last fold in the flour. Bake in muffin tin with papers for thirty minutes at 350.
