Judith's Tomato Salad

Delicious and healthy alternative to a heavy side dish
Ingredients
- 2 cups Organic Grape Tomatoes
- 1/2 cup Sweet White Corn
- 3/4 cup Baby Seedless Cucumbers
- 1/4 cup Red Onion
- 1/4 cup Jicama
- 3 tbsp Basil, Fresh
- 3 tbsp Light Champagne Dressing
Directions
Wash all vegetables. Slice tomatoes in half and place in bowl, add diced cucumber, jicama and onion and add to tomatoes. Cut corn off cob and add to tomato mixture. With kitchen sissor, cut basil into tiny pieces and add to tomato mixture then toss with dressing. Chill at least a hour to allow flavors to marry and serve.
