Kale shines for breakfast in this fun fruit salad. If you are trying to get more fruits and vegetables into your diet, this is a tasty and colorful way to do it.

Directions

1. To make the dressing, blend the tofu, blueberries, olive oil, apple cider vinegar, honey and salt until smooth. Set aside.
2. Heat a small frying pan over medium high heat. Add the sunflower seeds and stir continuously for a couple of minutes. As the seeds turn brown, turn off the heat and stir in the two drops of tamari. Set aside.
3. Place a quarter cup of water into a skillet and heat over high heat. Add the kale to the water and heat for a minute or two to wilt the kale.
4. Place the kale into a bowl or onto plates and toss in the chopped fruit, sunflower seeds and dressing.

Notes:
Use red, green or a combination of grapes.
