Kale Fruit Salad With Blueberry Dressing

Kale shines for breakfast in this fun fruit salad. If you are trying to get more fruits and vegetables into your diet, this is a tasty and colorful way to do it.

INGREDIENTS

SERVES 2

  • 7 oz Tofu
  • 1/2 cup blueberries
  • 1 tbsp olive oil
  • 1 tbsp cider vinegar
  • 1 tbsp Raw Honey
  • 1/4 tsp Salt
  • 1/4 lb raw kale
  • 2 fruit kiwi
  • 1 cup grapes
  • 1 cup Papaya Spears
  • 2 tbsp Sunflower Seeds, Organic Raw
  • 1/4 tsp Tamari

DIRECTIONS

1 To make the dressing, blend the tofu, blueberries, olive oil, apple cider vinegar, honey and salt until smooth. Set aside.
2 Heat a small frying pan over medium high heat. Add the sunflower seeds and stir continuously for a couple of minutes. As the seeds turn brown, turn off the heat and stir in the two drops of tamari. Set aside.
3 Place a quarter cup of water into a skillet and heat over high heat. Add the kale to the water and heat for a minute or two to wilt the kale.
4 Place the kale into a bowl or onto plates and toss in the chopped fruit, sunflower seeds and dressing.
