Kathryn's Omelette Sandwich

Omelette with lots of sautéed vegetables, served on half a toasted roll
Ingredients
- 4 Wheat Ciabatta Rolls
- 6 egg
- 1 tbsp Pure Canola Oil
- 1 cup Onions
- 2 3/4 oz Bell Pepper, Red
- 2 Garlic Clove
- 1 Jalapeno Pepper
- 4 Sliced Medium Cheddar
- 1 Tomatoes
- 1/4 cup Green Onion
- 1/8 tsp Salt*
Directions
Coarsely chop all vegetables. Saute onion, pepper, jalapeno, and garlic over medium heat. Whisk eggs and slowly pour over sautéed vegetables. Cut cheese into smaller pieces and sprinkle over egg. Also sprinkle on green onion and tomato. Sprinkle on salt as desired. Cover pan with lid and cook until egg is firmed up, approximately 10 minutes. Slice into 8 wedges.
Cut ciabatta rolls in half and toast. Serve omelette slice on top of each roll half.
This recipe makes 8 servings.
