turkey, corn, cannelini bean based chili
Ingredients
- 16 oz Cut Corn
- 16 oz Ground White Turkey
- 32 oz Vegetable Broth (low Sodium)
- 38 oz Cannellini Beans
- 4 oz Diced Green Chilies
- 3 tbsp Olive Oil
- 1 cup Celery
- 1 tbsp Garlic
- 2 tsp Fresh Oregano
- 1 tbsp Chili Powder Generic
- 1 tsp Ground Cumin
- 3/4 tsp Spices,Ground Coriander
Directions
In a large soup pot, cook the onion and celery in olive oil over medium heat until tender, then add garlic and saute for a few seconds to bring out the aroma. Do not brown the vegetables. Add the ground meat and continue to cook until it is well browned. Add the seasonings during the browning process. (Alternatively, make a mix of all the seasonings and coat the cubed chicken in the seasonings, then brown it in the pan with the vegetables).
Add the chilis, frozen corn, beans, and chicken stock and stir gently to combine.
Reduce the heat to low and simmer until the flavors come together (I usually cook mine for at least an hour).
Serve chili in a big bowl over a portion of rice or chips or a baked potato. Top with your favorite chili toppings like cheese, sour cream, scallions, etc. and enjoy!
