Kellys Veggie Chilli
Ingredients
- 1 medium Zucchini (raw)
- 1 cup Yellow Squash (summer)
- 30 oz Red Kidney Beans Low Sodium
- 30 oz Diced Tomatoes (canned) - No Salt Added
- 8 oz Tomato Sauce, No Salt Added
- 2 Garlic Clove
- 1 tbsp Oregano, Dried
- 1 tsp Basil, Dried
- 1/4 tsp Spices, Crushed Red Peppers
- 1 medium Onion, Raw
- 2 tbsp Evoo Rachael Ray Extra Virgin Olive Oil
Directions
1. heat skillet
2. Drizzle pan with olive oil.
3. As pan heats, add pressed garlic cloves and chopped onion.
4. Add chopped zucchini and squash.
5. Drain diced tomatoes and add to pan.
6. Drain beans and add to pan.
7. Add spices. Don't be heavy handed on the red pepper flakes, unless you want heat.
8. Add small can of Tomato Sauce.
9. Simmer until liquid cooks off, less soupy texture.
