Kevy's Rice OR Roni

Ingredients
- 2 lb Ground Beef, 95% Lean
- 1 cup Rice, White
- 56 oz Diced Tomatoes Canned
- 1 cup Onions
- 4 Garlic Clove
- 1 cup Raw Sweet Red Peppers
- 3 tbsp Curry Powder
- 1/8 tsp Salt*
- 1 tsp Ground Black Pepper
- 1/4 tsp Ground Cayenne Pepper
- 2 tbsp Pure Canola Oil
- 3/4 cup Drinking Water
Directions
Use an electric fry pan and heat to 325F.
1. Dice one large sweet Vidalia [or yellow] onion, large red pepper and 4 gloves of garlic.
2. Place the ground beef in the electric fry pan and brown the meat until cooked.
3. Use a separate stove top frying pan, place 2 Tbsp of Canola oil in pan and heat over medium setting. Place diced onion, red pepper and garlic cloves into the pan and saute until onions are clarified.
4. Place 2 cans [28 fl. ounces cans]of diced tomatoes and 3/4 C water into the electric fry pan when all of the beef is browned and then add curry, salt, ground pepper and cayenne pepper [optional].
5. Add the sauteed onions, red pepper and garlic into the electric fry pan.
6. Stir in 1C of uncooked rice into all of the ingredients and stir well mixing the rice into the entire mixture. Allow everything to come to a boil.
7. Cover the electric fry pan and reduce heat to 225F.
8. Cook for 20 minutes or until rice is cooked.
Serve - Makes 8 - 1C servings.
