Here we use hormone and antibiotic-free grilled chicken breasts that are marinated with amino-rich, low-glycemic Coconut Secret Teriyaki Sauce. Simply mix the grilled chicken with chopped cucumbers, shredded carrots and the kimchi, and then scoop the mixture into Bibb lettuce cups.

1. Marinate chicken breasts in teriyaki sauce overnight.
2. Grill marinated chicken away from direct flame, brushing the meat with teriyaki sauce every two minutes until it is well cooked.
3. When chicken has cooled, shred by hand into fine pieces.
4. Drizzle 2 tablespoons of additional sauce over the meat.
5. Toss cucumber, carrots, cabbage and kimchi in a large bowl, gradually adding in chicken.
6. Scoop mixture evenly into lettuce pieces. Garnish with sesame seeds.
7. Serve immediately.
