Kim's "Zeverly House's Pumpkin Muffins". Kim got this recipe from NC Historic Restaurants Cookbook.
Ingredients
- 1 cup Pumpkin
- 2 Large Egg
- 1/3 cup Purified Drinking Water
- 1/3 cup Butter
- 1 2/3 cups Unbleached All-purpose Flour
- 1 1/2 cups Sugar
- 1/3 cup Seedless Raisins
- 1 tsp All Natural Baking Soda
- 1/2 tsp Cinnamon
- 1/4 tsp Ginger Root
- 1/4 tsp Nutmeg, Ground
- 1/4 tsp Salt
- 1/4 tsp Baking Powder
- 1/8 tsp Cloves, Ground
Directions
Mix wet ingredients thoroughly; add dry ingredients, and stir until blended. Spray paper liners with Pam and fill them 2/3 full. Bake at 350 until golden brown, about 35 minutes. Yields 18.
