Kristina's Potato Salad (Revised Moosewood Recipe)

Low fat potato salad from Moosewood cookbook. Excellent!
Ingredients
- 6 red potato
- 3 large Hard-boiled Egg
- 1 medium Red Bell Pepper, Raw
- 3 stalk Fresh GREEN ONIONS
- 66 1/2 g Chopped Cucumber
- 1 cup Parsley
- 1/4 cup Dill Weed, Fresh
- 1 tsp Salt
- 1/4 tbsp Pepper, Black
- 1/4 cup Vinegar, Cider
- 2 tsp Mustard Powder
- 4 tsp Tarragon, Dried
- 2 tbsp Horseradish, Prepared
- 4 tbsp Mayonnaise
- 1/2 cup Plain Low Fat Yogurt
Directions
Prepare ingredients:
* add diced potatoes to water, boil until tender (leave skin on).
* hard boil eggs then dice
* dice bell pepper
* finely mince scallions
* finely mince cucumber (use one small cucumber)
* finely mince parsley (use one packed cup).
* finely mince dill
Combine all ingredients in a mixing bowl. Mix and taste, add extra spices/vinegar to taste. Cover and chill.
