Lamb provides an excellent source of omega-3 fats, which can decrease inflammation and heart disease risk. It’s also an excellent source of protein and a good source of zinc, which supports the immune system and reduces stress levels.



1. Add mint, garlic, vinegar, broth, salt and pepper to a blender and pulse until smooth.
2. Pat lamb chops dry and season with salt and pepper.
3. Warm two saute pans over medium-high heat. When hot, spray both with vegetable oil.
4. After 1 minute, add mushrooms to one pan and lamb chops to the other.
5. Cook mushrooms 3 minutes without stirring, then season with salt and pepper, toss, season again and cook until golden brown (another 5-8 minutes).
6. Sear lamb chops 2 minutes, flip and cook 3 more minutes. (If you prefer them to be cooked to medium, cook 3-4 minutes.) Let rest 3 minutes.
7. Serve chops over mushrooms with small bowls of mint sauce for dipping.
