Lamb Ragu from We Love DC

A lamb ragu for dinner. Takes forever, but it's worth it.
Ingredients
- 3 1/2 cups Coarse Ground Tomatoes
- 20 tbsp Tomato Paste
- 3 oz Large Carrot
- 3 oz Celery, Raw
- 1 cup Onions
- 56 oz Lamb
Directions
Brown the lamb in the pot over medium heat. Remove lamb and rest. Cook mirepoix in drippings with garlic. Add in tomatoes and then braise the lamb for 2 hours.
Remove the lamb and tear it with forks, then add it back to the pot and cook another 30 minutes.
Serve with pasta.
