In a small bowl, conbine cucumber, yogurt, mayo, lemon juice, and dill. Cover, and chill for up to 24 hours.

In a Large bowl, layer lettuce, artichoke hearts, tomatoes, pepperoncini peppers, olives, cheese, and onion as desired. Cover, and refrigerate for up to 24 hours.

Sprinkle shrimp (or substitute with salame or chicken) evenly with Greek seasoning. In a large skillet, heat oil over medium-heat. Add meat, and cook for 1 minute per side, until cooked. Top salad with meat. serve with cucumber dressing
