1. In an 8- x 12-inch or similar-sized serving dish, layer half of the hummus, all of the cayenne, onion, and cucumber, remaining hummus, and all of the tomatoes.
2. Sprinkle with olive oil and parsley leaves.
3. Serve the layered dip with pita chips (or blue corn tortilla chips).
