This enticing layered hummus dip will definitely impress your guests. And after your guests have demolished this recipe, proudly announce that it was vegan, loaded with fiber and helped them all to meet their veggie quota for the day!

INGREDIENTS

SERVES 10

  • 3 1/2 cups Classic Hummus
  • 1/8 tsp Spices & Seasonings, Ground Cayenne Pepper
  • 1/2 medium red onion
  • 2 cups English Cucumber
  • 1 cup Grape Tomatoes
  • 1 tbsp Olive Oil, Extra Virgin
  • 1/4 cup Parsley, Raw Fresh
  • 10 oz Whole Grain Pita Chips - Sea Salt

DIRECTIONS

1 In an 8- x 12-inch or similar-sized serving dish, layer half of the hummus, all of the cayenne, onion, and cucumber, remaining hummus, and all of the tomatoes.
2 Sprinkle with olive oil and parsley leaves.
3 Serve the layered dip with pita chips (or blue corn tortilla chips).
