Layered Meatloaf

I saw this idea in a magazine and have since made it my own. It's a layered meatloaf with creamed spinach in the center. I like how it keeps it moist. I've tried making this with a mix of ground turkey and beef, but meatloaf is really made to be a beef dish - It's OK, not as good with just ground beef.
Ingredients
- 1 lb 93/7 Lean Ground Beef
- 1 egg
- 3/4 cup Skim Milk
- 1 tsp Salt
- 1/4 cup Breadcrumbs
- 3 cups Spinach
- 1 tbsp Butter
- 1 tbsp White Flour
- 1/2 cup Part Skim Ricotta
- 2 tbsp Whole Grain Mustard
- 1 Garlic Clove
- 2 tbsp Shallots
Directions
Mix beef, egg, breadcrumbs, salt, and 2 tsp Italian seasoning with 1/4 cup of milk in a bowl - do not over mix.
To make spinach filling, melt 1tbsp unsalted butter - add 1 tbsp flour to create a roux. Wisk in 1/2 cup milk - when incorporated wisk in ricotta cheese then spinach - cook until just melted.
(you can add an onion, shallot, garlic, or redpepper flakes as you prefer.
layer half the beef - then spinach, then other half of the beef in a loaf pan. Top with your choice of mustard and bake 45 minutes on 375.
