Lazy Daisy Cake

A light sponge cake covered in a coconut caramel.
Ingredients
- 2 Eggs
- 1 cup Sugar, Granulated
- 1 cup Flour
- 1 tsp Baking Powder
- 1 tsp Vanilla
- 1/2 serving
- 1 tbsp Margarine
- 1 cup Shredded Sweetened Coconut
- 1 cup Sugars, Brown
- 6 tbsp Margarine
- 4 tbsp Milk-1%
Directions
Beat eggs, add sugar and vanilla. Sift flour, baking powder, and salt. Add to first mixture. Heat 1/2 cup milk and 1 tbsp butter and bring to boiling point – add to the rest.
Bake 35 minutes at 350°F (180°C). Five minutes before cake is completely baked, spread with following:
Mix coconut, brown sugar, remaining margarine and milk in a small saucepan. Bring to a boil. Spread on cake that is almost done.
