Leah's Cranberry Almond Cake Bars

Delicious cranberry almond bars with a cake like texture! Nothing healthy here!
Ingredients
- 1 1/2 cups White Flour Bleached
- 1/2 cup 100% Stone Ground Amaranth Flour
- 1 cup Sugar, White Granulated
- 1/2 cup Light Brown Sugar
- 1/2 tsp Salt
- 4 cups Fresh Cranberries
- 1 cup Almonds, Blanched
- 1 cup Organic Salted Butter
- 4 Large Egg
- 2 tsp Pure Vanilla Extract
- 1/4 cup Quaker Oats Oatmeal
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch pan.
2. Combine the flour, sugar, and salt. Stir in the cranberries and the almonds, and toss to coat. Stir in the butter, beaten eggs, and almond extract. If you are using frozen cranberries, the mixture will be very thick. Spread the batter into the prepared pan.
3. Bake at 350 degrees F (175 degrees C) for 40 minutes, or until a wooden pick inserted near the center comes out clean. Serve warm with whipped cream or ice cream.
