Lemon Cupcakes with Citrus Icing

Infused with intense lemon flavor and perfect little cakes for spring time celebration.
Ingredients
- 200 g Plain Flour
- 125 g Golden Caster Sugar
- 1 tsp Baking Powder
- 1/4 tsp Baking Soda
- 1/3 cup Safflower Oil
- 1 Egg (large)
- 1/4 cup Fat Free Milk
- 1/4 cup LEMON Juice, Fresh Squeezed
- 1 tsp Pure Vanilla Extract
- 1/4 tsp Salt
- 2 tbsp Orange Juice
- 2 tsp Lemon Zest
- 180 g Icing Sugar
Directions
Pre-heat oven to 180 degrees Celsius. Sift together plain flour, baking powder, baking soda, salt and sugar in a bowl. In a separate bowl, mix together oil, egg, milk, lemon juice, 1 tsp of lemon zest and vanilla extract until combined. Then add the dry mixture in and mix until smooth. Divide into muffin cups and bake for 20 minutes or until lightly brown. Cool on a wire rack. To make the icing, mix the icing sugar, orange juice and lemon zest until smooth. Spoon on top of cooled cupcakes.
