Lemon Ginger Hummus

Easy versatile hummus. Sub out ginger, add basil, garlic, cayenne, even tomatoes! Save a bit of the lemon zest to sprinkle on top of the hummus. It makes a pretty garnish and lets diners know what zesty flavors lurk in this delicious dip!
Ingredients
- 1/2 cup Chickpeas, Canned
- 1 tbsp Organic Tahini
- 2 clove Garlic
- 2 tbsp Lemon
- 1 tsp Ginger Root
- 1/2 cup Edamame
Directions
Blend chickpeas, tahini, minced ginger and garlic, lemon juice and some lemon zest, cayenne, salt and pepper until smooth. Enjoy! I usually add basil or oregano and sometimes spinach.
