This lemony pea pesto is both light and refreshing. Use it as a spread on pizza or as a sauce for pasta.

Ingredients

  • 10 oz Frozen Peas
  • 2 tbsp Dry Toasted Pignolias (Pine Nuts)
  • 2 clove garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp Filtered Water
  • 2 tbsp Hemp Seeds
  • 1 tbsp lemon zest
  • 2 tbsp Lemon juice, canned or bottled
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper

Directions

1. Quick-thaw the peas by blanching in boiling water for 3 minutes or microwaving until soft.
2. In a food processor or high-speed blender, combine the peas, pine nuts, garlic, oil, water, hemp seeds, lemon zest, lemon juice, salt, and pepper to taste and pulse until the mixture is well combined and thick.
3. Adjust seasonings to taste. Store in an airtight glass container.
