Lemon Squares
Ingredients
- 6 tbsp Unsalted BUTTER
- 1/2 cup Confectioners' Sugar
- 1 cup All-purpose Flour
- 4 Eggs
- 3/4 cup Sugar, Granulated
- 4 tsp Lemon Zest
- 1/2 cup Lemon Juice
- 4 tbsp All-purpose Flour
- 1/2 tsp Baking Powder
- 1/8 tsp Salt
- 2 tbsp Confectioners' Sugar
Directions
1. preheat oven to 350F.
2. beat butter and confectioners' sugar.
3. add 1 cup flour slowly till crumbly.
4. pat batter into 8x8 or 9x9 square pan.
5. bake batter until golden brown (about 15-20 minutes), on bottom rack of oven.
6. remove from oven, prick holes in biscuit layer with a fork and and allow to cool on wire rack.
7. combine 4 tablespoons flour, baking powder and salt.
8. beat eggs with sugar, add lemon zest, lemon juice, and flour mixture.
9. pour mixture over biscuit layer and bake until set, about 25-30 minutes.
10. remove from oven and cool on wire rack.
11. dust with the 2 tablespoons of confectioners' sugar.
