Lemon Thyme Chicken w/ Mashed Potatoes and corn

Another quick and easy recipe that is low in calories. I added mashed potatoes and steamed corn with it.
Ingredients
- 1/4 cup All-purpose Flour
- 2/5 tsp Salt
- 1/4 tsp Black Pepper
- 16 oz Chicken Breast
- 1/2 tbsp Olive Oil
- 1 medium Yellow Onion
- 1 tbsp Butter
- 1/2 tsp Thyme, Dried
- 1 cup Chicken Broth
- 0 oz Lemon Juice, Freshly Squeezed
- 2 cups Mash Potatoes
- 2 cups Corn
Directions
1. In a small bowl, combine the flour, salt and pepper. Set aside 4-1/2 teaspoons for sauce. Sprinkle remaining flour mixture over both sides of chicken.
2. In a large nonstick skillet coated with cooking spray, cook chicken in oil over medium heat for 7-9 minutes on each side or until juices run clear. Remove and keep warm.
3. In the same pan, saute onion in butter until tender. Add thyme and reserved flour mixture; stir until blended. Gradually stir in the broth and lemon juice, scraping up any browned bits from bottom of pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve over chicken.
