Lemongrass has assorted B vitamins and is antimicrobial. Sheep’s milk cheeses tend to be tangy, and the subtle citrus of lemongrass brightens the cheese and brings out its sharpness.

Directions:
1. In a steamer pan or in a pot with half an inch of water, steam the beets with lemongrass for 20 minutes or until cooked through.
2. Add salt and pepper to the beets and let cool.
3. Layer the beets in a Mason jar. Add cheese, and drizzle with oil and vinegar.
4. Pack arugula on top and seal until ready to eat.
