Lentil/Brown Rice Mix

Brown rice, lentils, spinach and carrots
Ingredients
- 1 cup Whole Grain Brown Rice
- 1 cup Lentils
- 10 oz Frozen Chopped Spinach
- 1/2 cup Organic Baby Cut Carrots
- 1/4 cup Yellow Onion
- 1 tbsp Garlic (minced)
- 3 tbsp Parsley, Dried
- 1 tsp Sea Salt Grinder
- 1/2 tsp Ground Black Pepper
- 1/2 cup shredded parmesan
- 3 tbsp Extra Virgin Olive Oil
Directions
Cook ingredients separately and mix: Sautee onions and garlic in olive oil, add cooked carrots, add rice, add lentils and spinach (cook all first) add parmesan and season (parsley, salt and pepper) to taste. great for a side dish or main course - includes veg and protein. Also kid friendly (I originally made this as a dish for my 9 month old - he LOVED it!)
