Lentil Dahl

I love this simple curry-inspired dish.
Ingredients
- 1 cup Lentils (red)
- 2 cups Water
- 1 medium White Onion
- 1 tsp Curry Powder
- 1 tsp Tandoori Curry Paste
- 1/2 tsp Cayenne Pepper
- 1/2 tsp Pepper, Black
- 1 tsp Salt
- 2 cloves Garlic Clove
- 1/2 cup Shredded Unsweetened Coconut
- 1 cup Non-fat Yogurt
Directions
Simmer lentils in a covered pot in the water until well cooked. In a separate frying pan or wok, saute onion in oil until translucent. Add spices and coconut and cook for a few minutes more. Lower the temperature to minimum, and add cooked lentils and yogurt. Stir until well mixed and heated through (5-10 minutes).
You can serve on mixed greens or spinach with naan bread on the side.
