Lentil Salad

Cold lentil salad.
Ingredients
- 1 lb Lentils
- 1 tbsp Cloves, Ground
- 2 Spices, Whole Bay Leaves
- 1/4 tsp Sea Salt-fine
- 2 tbsp Organic Salsa Medium
- 1/4 cup Olive Oil
- 1/4 cup Balsamic Vinegar
- 2 large stalk Raw Celery
- 2 tbsp Parsley
- 2 cloves Garlic, Raw
Directions
In a large saucepan combine lentils, 4 cups water, cloves, bay leaves, garlic, sea salt and 1 Tbsp of salsa. Bring to boil, reduce heat and simmer, covered, 30 minutes, until lentils are tender. Drain. Add oil, vinegar, and remaining 1 Tbsp of salsa. Mix well and cool. After chilling, add celery and parsley. Makes 14 servings (1/2 cup each).
