Lentil and Sauteed Vegetables w/ Wild Rice Medley

French lentils cooked w/ carrots. Sauteed onion, pepper, and mushrooms. Wild rice, simmer all in wine.
Ingredients
- 2 cups Lentils
- 1 cup Peppers, Sweet, Red
- 1 cup Onions
- 1 cup Brown And Wild Rice (ready Whole Grain Medley)
- 3 oz Sliced Baby Bella
- 2 tbsp Olive Oil
Directions
bring 2 c water to boil and add 1 cup dried lentils plus one peeled and chopped carrot. Cook until soft about 20 minutes.
Heat olive oil in large frying pan. Sautee onions for about 10 min. Add chopped red pepper, mushrooms, sautee for about 5 more min. Add in the lentils/carrots after draining them. Stir in the cooked wild rice medley. Sautee till all is heated. Add about 1/2 cup of red wine and simmer about 5 minutes. Add spices, such a tumeric, thyme and a little salt.
