Lentil and Veggie soup

Delicious and healthy lentil soup.
Ingredients
- 1 average potato
- 1 medium Onion, Raw
- 2 cups Carrots
- 1 cup Lentil
- 2 tsp Fresh Mint
- 1 tsp Ground Cumin
- 2 tsp Salt*
- 1 tsp Pepper*
- 1 tsp Thyme, Dried
Directions
Wash lentils until water runs clear. Dice the potato and onion and slice the carrots, add to lentils. Cover with water; about 3 litres but if it looks too thick just add more. when vegetables are tender, purée in a liquidiser. Enjoy!
