Lentils and Brown Rice Pilaf

Cook for 25-30 mins after adding the rice and lentils.
Ingredients
- 234 g Carrots
- 100 g Celery
- 1/2 cup brown rice
- 1/2 cup French Green Lentils
- 2 cups Onions
- 1/4 cup Parsley
- 4 slice of Tomato
- 2 tbsp Olive Oil
- 1 3/4 cups Organic Vegetable Broth
- 1 cloves Garlic Clove
Directions
1. Cook chopped veggies & mince garlic in olive oil over medium heat until soft
2. Add broth, lentils, and rice and bring to a boil
3. Cover and reduce heat to a simmer and continue to cook for 25-30 mins
4. Add chopped parsley and chopped tomato
5. Serve!
