Light Beef Vegetable Soup

Wholesome vegetable soup in beef broth.
Ingredients
- 4 cups Low Sodium Beef Broth 50% Less Sodium
- 1 cup Tap Water
- 1 1/4 cups Yellow Crookneck Squash
- 1 1/4 cups Whole Carrots
- 2 1/2 cups Potato, Red
- 1 cup Onion (white - Raw Chopped)
- 1 1/4 cups Celery
- 1 tbsp Garlic
- 1 tsp Salt
- 1 tsp Onion Powder
- 1/2 tsp Spices, Pepper, Black
- 1 tsp Garlic Powder 2.9 oz
- 1 tbsp Olive Oil
- 1 tsp Italian Seasoning
- 1 tsp Basil, Dried
Directions
Dice all vegetables as small as you like. Saute onion, garlic, and carrots in olive oil on med-high heat. Add half cup of water to allow carrots to continue to soften without burning. After several minutes, add remaining vegetables and water. Saute for 8-10 minutes to allow all vegetables to cook. Add Swanson Beef Broth. Add all spices and simmer on low for 15 minutes. Enjoy.
