Classic caprese salad is tomato with mozarella and basil coated with olive oil and balsamic vinegar. This one cuts back the calories bu about half.

Vinegarette: Add all ingredients and shake!

Slice tomato into 1/4 inch slices. Slice onion as thinly as possible. Alternate layers of tomato and onion to create a circular pattern around the plate. Roll the basil leaves (4 or 5) together tightly and slice into thin slices (called a chiffonade) and sprinkle over the tomatoes and onions. Drizzle with vinegarette dressing and allow to stand at room temperature from 1 to 2 hours. At serving. place 1 slice of mozarella per person on the plate and serve.
