LightFoot's Green Curry of Yum

Green curried yumminess. Don't feel you have to put it over rice. I just eat it plain.
Ingredients
- 8 oz Sirloin Steak
- 2 cups Potato, Raw, Small
- 1 large Green Bell Pepper
- 1 medium Yellow Onion
- 1 tbsp Green Thai Curry Paste
- 12 oz Coconut Milk
- 5 pieces Dried Morel Mushrooms
- 2 tbsp Pure Canola Oil
Directions
Brown steak and cut into bite-size pieces.
Chop and chunk potatoes, pepper, and onion.
Reconstitute mushrooms in hot water and dice.
Heat canola oil and then add curry paste. Stir and cook until curry starts smelling really good.
Add potato, pepper, and onion and stir fry about 5 minutes.
Add coconut milk, steak, and mushrooms. Stir well and simmer 10-15 minutes until the potatoes are done.
