Lite Salad Niçoise

Light version of tuna salad
Ingredients
- 4 oz Chunk Light Canned Tuna
- 1 medium raw Roma Tomato
- 1 large Hard-Boiled Egg
- 2 tbsp Capers
- 4 tbsp Light Sour Cream
- 2 tbsp Olives
- 2 tbsp Onions, Red
- 1/2 tsp Dijon Mustard
- 1/2 tsp Parsley, Dried
Directions
Strain tuna. Chop tomato, egg, olives and onions. Mix all ingredients and season with salt and pepper to taste. Serve over shredded lettuce or between sliced bread.
