Red Beans and Rice from Fatfree Vegan Kitchen.
Ingredients
- 1 lb Red Kidney Beans Dried
- 4 cloves Fresh Garlic
- 1 medium Onion, Raw
- 4 large stalk Raw Celery
- 1 large Green Bell Pepper
- 3 tbsp Bay Leaf
- 2 tsp Thyme, Dried
- 1 tsp Spices, Oregano Leaves
- 1 tsp Spices, Cayenne Pepper
- 1/2 tsp Pepper, Black
- 2 tsp Chipotle Peppers In Adobo Sauce
- 1 tbsp Tabasco Sauce
- 1 tsp Liquid Smoke
- 2 Vegetarian Vegetable Bouillon 6 Extra Large Cubes
Directions
Soak the beans overnight, drain, and fill the pot with water 2 inches above the beans. Put on high heat while you chop other ingredients in a food processor. When the beans reach a boil reduce heat to a simmer and stir regularly for 2-3 hours until beans are falling apart. Serve over rice.
