Low Carb Roast Beef Hash

A fabulously easy and delicious way to use up leftover Roast Beef. I like to make this the next morning and serve it with scrambled or poached eggs!
Ingredients
- 2 tbsp Butter
- 2/3 cup Chopped Onions
- 2 clove Garlic
- 1 cup Cauliflower, Fresh Steamed
- 4 oz Vegetables, Assorted Fresh
- 2 cups Roast Beef
- 2 tsp Salt
- 1 tbsp Pepper, Black
- 1 cup Milk-1%
- 1/2 cup Beef Gravy
Directions
1. In a large skillet or frying pan, melt the butter
2. Saute the chopped onion until just golden, add the garlic and saute one more minute
3. Toss in the chopped, steamed cauliflower and any other vegetables you would like; mushrooms and red peppers work great (if you aren't low-carbing you can also add your leftover chopped potatoes at this stage).
4. Add the leftover roast beef and stir everything together in the pan
5. In a separate bowl, whisk together the gravy and milk until smooth. Pour over the beef and veggie mixture and bring to a boil
6. Reduce heat and let simmer 15 minutes or until the liquid is mostly evaporated
Serve with eggs done any way you like, some roasted tomatoes and enjoy!
