Low-Fat Banana Bread Muffins

These are low fat banana bread muffins, moist and delicious. A great alternative for when you have that craving but don't want to indulge in a full fat recipe.
Ingredients
- 3/4 cup Unbleached All-purpose Flour
- 1 cup Organic Whole Wheat Flour
- 100 ml All Natural Liquid Egg Whites
- 1/3 cup Granulated White Sugar, 1 Cup
- 1/3 cup Light Brown Sugar (1 Cup)
- 1/3 cup 1% Partly Skimmed Milk
- 1 tbsp Vegetable Oil
- 1/2 tsp Pure Vanilla Extract
- 1 1/2 tsp Cinnamon, Ground
- 2 tsp Magic Baking Powder
- 1 tsp Baking Soda
- 1/2 tsp Iodized Salt
- 3 medium Banana
- 1/4 cup Natural Applesauce
Directions
1. Preheat oven to 350C.
2. Combine egg whites and brown & white sugar. Beat until light and fluffy, about 5 minutes.
3. Beat in bananas (use very ripe & mashed if possible), applesauce, milk, oil and vanilla until combined.
4. In a separate bowl, sift together flour whole wheat and all-purpose), baking powder, baking soda and salt.
5. Blend flour mixture into banana mixture until combined and smooth, do not over mix.
6. Spray 12 muffin tin with non-stick cooking spray (or your own oil sprayer). Pour in batter evenly.
7. Bake in preheated pan until golden and toothpick inserted into center of muffin comes out clean. About 30 minutes.
8. Let muffins cool 5 minutes, then remove from muffin tin and place on cooling rack.
